Sometimes I let things simmer overnight or a week or weeks or never publish or lose where I wrote them. A novel has been simmering oer 20 years with some work towards it rarely. I'm afraid to say that sometimes I feel impulsive and want that piece published. Your mention of editing till your sick of it is one I heard a famous novelist voice. By the time I'm sick of it, I might not want to publish.... Sometimes pieces get timed out. Thanks for bringing up the simmer quotient.
